Matcha panna cotta

Ingredients (serves 3-4)

  • Green Tea 55g
  • Granulated gelatin 5g
  • 200g milk
  • 200g fresh cream

Green tea can be changed to 8g matcha + 50g sugar.

How to make it

  1. Mix the green tea, gelatin and milk in a heat-resistant container, heat in the microwave (600W) for 1.5 to 2 minutes, and mix well to dissolve.
  2. Add the cream and mix. If any gelatin remains undissolved, strain it through a tea strainer.
  3. Place the bowl over ice water and mix until thickened (to prevent separation and to prevent the matcha from settling).
  4. Place in a container and chill in the refrigerator for 2-3 hours until set.
    Add boiled azuki beans, fresh cream, etc. as desired.

If you use matcha, mixing the matcha and sugar well first will prevent lumps from forming.
